Baby potatoes and eggplants in a garlic peanut sauce

Ingredients

  • 6-7 Sm Round Eggplants
  • 6-7 Whole Baby Potatoes
  • 1 Head Garlic (8 cloves)
  • 1/2 cup Peanuts
  • 1 tsp Cumin Seeds
  • 2 tsp Fennel Seeds
  • 1 Whole Clove
  • 1 tsp Red Chili pd
  • 1/2 tsp Turmeric pd
  • 2 tsp Coriander pd
  • - - Salt to Taste
  • 3 tbsp Olive Oil
  • 1 cup Water

Preparation

  1. Peel potatoes and wash them along with eggplants. Make a slit in the center of the vegetables and keep aside.
  2. Make a smooth paste of the peanuts along with the rest of the spices, salt and garlic in a blender.
  3. Stuff the eggplants and potatoes with this paste.
  4. Heat oil in a large non-stick frying pan and put the potatoes and eggplants without overcrowding. Fry on high heat for about 2 to 3 minutes till they turn a light brown in colour and then turn each one and fry the other side gets light brown too.
  5. Gently pour about a cup of water, cover the pan and cook for about 20 minutes till the vegetables are cooked.
